Edible Lace

When the USA Sugarveil lace was released into the UK market I was the first to buy it! That was back in 2010. I didn't get along with it very well at the time and put it to one side for years and never went back to it. Then there was a resurgence of interest in edible lace when Claire Bowman released her edible lace product. Owning a cake decorating shop I come across all sorts of products including various brands of edible lace, so I've tried most of them. I got back into the lace with Claire's product and to my surprise, I found that it worked straight away and best of all, it stayed flexible for months, this was unlike my Sugarveil experience of 2010 when I had difficulty removing it from the mat and when successful, it crumbled a few days later.

My other experiences include one called Flexi-Ice from Squires Kitchen. Just add water and mix. However, I found this one to be quite lumpy and gelatinous when mixed, this is probably down to its ingredient of potato starch. This made it quite difficult to spread into the mat and it didn't stay flexible either. With Claire's the mix is smooth (metallics come premixed) and it is also a bright white whereas Squire's was off white. It is a cheaper alternative but there is a visual  and handling difference.

A close second is one from Doric called Sweet Lace, this handles very similarly to Claire's and is also a nice white colour. It also stays flexible. Price wise it is comparable to Claire.

We have seen a lot of the lace mats available online, but in our experience the mats by Claire Bowman are the best because they are so delicate, with the most intricate patterns and the depth of the mould is just right. We've had customers using the lace mix in mats they've bought online and have had issues with it setting. This appears to be down to the depth of the cuts in the mat, too deep and obviously drying times will vary.

If you've not used edible lace before it's simply a matter of mixing up a powder with water and a gel (preferably with a handheld mixer) for a few mins, spreading it on to the mat and letting it either a) air dry overnight or b) pop it in the oven on low. For the white mix I find it needs longer in the oven than what it says on the instructions. Don't forget if you need your lace to be gluten free to check the ingredients.
